These perfectly roasted vegetables are crispy on the outside, tender on the inside, and packed with amazing flavor.

Made with simple fresh ingredients and roasted to perfection, this recipe is heathy, easy, and perfect as a side dish or main meal.

 1 medium carrot
 1 stick celery
 300 g broccoli
 120 g bell pepper (half each) green, yellow, orange, and red
 100 g raw brown button mushrooms
 6 oz red onion
 3 cloves garlic
 10 cherry tomatoes
 250 g green beans
 56 g butter
 2 tsp olive oil
 1 tsp soy sauce
SPICES
 1 tsp thyme
 1 tsp lemon and herbs
 1 tsp black pepper
PREPARE THE VEGETABLES

1. Wash vegetables.

 2.  Chop all vegetables into similar sizes so they cook evenly.

SEASON

1. Turn the stove on medium heat.

2. Add butter to a large pan.

3. Place vegetables in a large pan (mix until all veggies become oily)

4. Add thyme, lemon and herbs, black pepper, and soy sauce. Toss well until everything is evenly coated.

5. Cover and let it simmer for 5 minutes.

 

ARRANGE ON BAKING SHEET

1. Spread the vegetables in a single layer on a baking tray. Do not overcrowd them, as this helps them roasted instead of steam.

Bake for 25-35 minutes, flipping halfway through, until vegetables are tender and slightly golden brown.

SERVE

 Remove from oven and serve warm as a side dish or with rice, chicken, fish, or pasta.
