Soft and fluffy African Mandazi, Golden on the outside, soft and fluffy on the inside! These classic East African mandazi are lightly sweet, perfectly spiced, and made with love.

Ingredients
 3 cups All-Purpose Flour
 ½ cup Sugar
 1 tsp Instant Yeast
 1 tsp Ground Cardamom
 ¼ tsp Salt
 1 cup Warm Coconut Milk (or regular milk)
 2 tbsp Melted Butter
 Any Oil (for deep frying)
Dry ingredients

In a large bowl combine:

Flour

Sugar

Yeast

Cardamom

Salt

Mix well.

 

Add Wet ingredients

In a bowl:

Pour in warm coconut milk gradually

Add melted butter or oil

Mix into the dry bowl until a soft dough forms.

Knead The Dough

Knead for 8-10 minutes until smooth and elastic

If sticky, add a little flour (don't make it hard)

Let The Dough Rise

Cover the bowl with a clean cloth

Let it rise in a warm place for 1 hour (or until doubled in size)

Shape The Mandazi

Roll out the dough to about 1/2 inch thickness

Cut into triangles or any desired shapes

Frying the Mandazi

Heat oil to medium heat

fry mandazi in batches for 2-3 minutes per side

turn until golden brown

Drain and Serve

Remove and place on paper towels 

Serve warm with tea, coffee, or juice
